3 Festive Cranberry, Apple and Grape Cocktails

Finishing off the festive period and my three-part instalment, I am going to be sharing 3 festive cocktails, which are going to fit straight into the Christmas weekend ahead. Christmas for me is always about cranberries. It is just something about cranberries (and oranges!) that just make the festive period that little bit more Christmassy. That's why I wanted to incorporate them into my cocktail recipes this year, alongside some other festive tastes and favourites.
Harvest Mimosas
Preparation: 5-10 minutes        Cooking Time: 5-10 minutes       Serves: 1


2 tbsp sugar
1 tsp cinnamon
1/4 cup of cranberry juice
1/4 cup of sparkling apple juice
1 bottle presecco
1 apple - 1/2 diced and the other 1/2 sliced into half moons


1. Combine the sugar and cinnamon in a shallow plate.
2. Dip the rim of each glass in water, then dip into the cinnamon and sugar combination ensuring that the rim of each glass is coated.
3. Fill each chosen glass with 1/4 of cranberry juice.
4. Fill another 1/4 of the glass with apple juice.
5. Top each glass up with prosecco, adding a few cranberries and diced apple slices.
6. Finish by adding a slice of apple for garnish on the side of the glass.

Preparation: 10 minutes        Cooking Time: 10 minutes       Serves: 1


2 granny smith apples (chopped)
1 cup whole fresh cranberries
1 cup green grapes (halved)
1 cup pomegranate seeds (optional)
1 cup sparkling grape juice
1 bottle prosecco 


1. In a large pitcher or bowl, add the apples, cranberries, grapes and pomegranate seeds (if desired).
2. Pour over sparkling grape juice and champagne just before serving.

Cranberry Cocktail
Preparation: 10-15 minutes        Cooking Time: 1 Day and 10 minutes       Serves: 5+


1 cup sugar
1 cup water
1 cup halved fresh cranberries
1 1/2 tsp vanilla extract
4 bottle sparkling prosecco or cava


1. In a small saucepan over a medium heat, combine the sugar and water stirring until the sugar dissolves.
2. Remove from heat, then add the cranberries and vanilla extract and stir gently. Refrigerate for at least 12 hours.

1. For the cocktail, add to each glass of choice 1 tbsp of the cranberry simple syrup that was refrigerated for 12 hours, plus 4 cranberries from the cranberry syrup.
2. Finish by topping each glass of choice with sparkling prosecco or cava.
